Plant grafted trees of a named cultivar rather than seedlings. Grafted stock on a selected rootstock enters production sooner and gives uniform pod quality, while seed-grown trees are cheaper and hardier but slower and variable in fruit size and quality (agro-r carob cultivation manual, 2025).

Harvest when pods have turned dark brown to black, feel hard and leathery, and are down to 10-12 percent moisture, generally late August to early October in the northern hemisphere; then air-dry 48-72 hours to about 8 percent moisture or the pods mould in store (agro-r manual 2025; Batlle and Tous 1997).

Expect a long unproductive period. Trees begin fruiting around 6-7 years from planting and yield only stabilises at roughly 20-25 years, so a carob planting is a two-decade commitment and intercropping with almond, fig or olive is common in the establishment phase.
